Temecula’s World of Wine Early Bird Tickets: $10 Off Thru February 1

Tuesday, December 10th, 2013

World of Wines Barrel Tasting Weekend is Temecula Valley’s first regional tasting event of 2014, taking place March 1 & 2.

The “World of Wine” theme demonstrates the fact that the Temecula-South Coast AVA successfully grows varietals from all over the world. The WoW event is passport style, where hundreds of ticket-holders armed with a glass and a map can enjoy a self-guided tour through wine country. Over the course of the weekend, Temecula Valley’s 35 wineries offer special tastes of newly released, unreleased and barrel samplings of great Temecula wines, along with tasty tidbits and live music.

To promote and celebrate sustainability, participating wineries will have fun competing in the Best Winery Cork Art Contest, where the winning winery will receive a $500 donation to their favorite Southern California charity and the winning guest voter will be awarded four tickets to the region’s next big passport event.

Get to Know… Baily Winery

Thursday, August 29th, 2013

The Story

Baily Winery is one of Temecula’s oldest wineries, founded in 1986. Owner and winemaker Phil Baily has produced hand-crafted premium vintage wines for over 25 years, and all made from grapes grown on his property in the Temecula Valley.  Their wine-making philosophy is simple: Baily makes wines that they personally like to drink. Their grapes grow on 28 acres of land across four different locations in Temecula Valley.

The Wines

Baily makes and sells all the Temecula Valley favorites including Cabernet, Merlot, Chardonnay, Riesling and plenty of classic red blends, such as Meritage. For the full list of Baily wines, visit the wine store.

The Vineyards

Mother’s Vineyard

The first acre of Mother’s Vineyard was planted by the Baily family on Mother’s Day in 1982. Expanded in 1983, it now comprises five and one-half acres, all planted to the Riesling variety. The grapes have the classic apricot flavor prized in Riesling.

Berenda Vineyard

Planted primarily to Bordeaux varieties, Cabernet Sauvignon (five and one-half acres), Cabernet Franc (two acres), Merlot (two acres), Sauvignon Blanc (two acres) and Semillon (one acre), this vineyard was planted in 1968 and purchased by the Baily family in 1994. In 2005, one and one-half acres of Malbec and two and one-half acres of Sangiovese were planted.

La Serena Vineyard

Comprised of one and one-half acres of Cabernet Sauvignon and one acre of Sauvignon Blanc, these grapevines are the ones you see at the visitor center. Grown on sandy/clay soil, they produce wines with exceptionally fruity varietal aromas.

Los Amantes Vineyard

Planted by Phil & Carol’s son and daughter-in-law, Chris and Kim, this vineyard has two acres of Chardonnay and two acres of Muscat Blanc. The soil is decomposed granite and well-drained, producing grapes with intense varietal aroma.

The Tasting Room

  • 33440 La Serena Way (Corner of Rancho California Road) in the heart of the Temecula Valley Wine Country.
  • Open from 11 to 5 daily, 10 to 5 on Saturdays
  • Call 951-676-WINE (9463)

This appointment-only experience features a library tasting with personal attention conducted in a beautifully appointed, intimate setting.  Included is a tour of the production facility at one of the few wineries in this Region where every bottle of wine is estate grown and bottled. Wine Country Recipe: Grilled Salmon with Easy Lemon-Dill Sauce and Asparagus

Tuesday, May 14th, 2013

Grilled Salmon with Easy Lemon-Dill Sauce and Asparagus

Recipe Courtesy of Wilson Creek Winery

Perfect for warm summer nights, this weekday meal is simple, quick and balanced. It has a lightness and lemony tang that refreshes and doesn’t weigh down the palate.

Pair this dish with…

While Wilson Creek pairs this with their Family Reserve Syrah, if you’re looking for a white – try a Sauvignon Blanc! Top choices include Callaway’s 2010 Special Selection Sauvignon Blanc or Falkner’s 2012 Sauvignon Blanc.

Ingredients:

2.5 lbs. fresh wild salmon fillets or steaks
1 lb. fresh asparagus
1 cup sour cream
3 tablespoons of fresh dill
1 tbsp paprika
1 tbsp olive oil
1 lemon

Directions:

Prepare a charcoal or gas-fired grill. If using a charcoal grill, group hot coals on one side of the grill base. Chop dill.  Remove woody end of asparagus by cutting off last inch of the stalk or snapping at the base. Season salmon generously on both sides with salt and fresh ground black pepper. Place asparagus onto a baking sheet and season with salt and pepper. Drizzle asparagus with olive oil and juice from half the lemon, and turn with tongs to coat evenly. Place salmon directly over hot coals or on lowest shelf of charcoal grill for 2 minutes to sear, then move to a higher shelf (gas grill) or across from the coals (charcoal grill). Piliarožės kaimo turizmo sodybos nuoma netoli Kauno Add asparagus with salmon on the grill and cook covered for about 10 minutes (five minutes on each side, depending on thickness of salmon.) For best results, do not cook past medium.

In a medium-sized mixing bowl, add sour cream, dill, paprika, salt & pepper and juice from 1/2 lemon and mix thoroughly. After salmon and asparagus have been removed from the grill and cooled slightly, pour lemon-dill sauce over salmon as well as over asparagus if desired, and garnish with fresh lemon and dill sprigs.
