The Story

Baily Winery is one of Temecula’s oldest wineries, founded in 1986. Owner and winemaker Phil Baily has produced hand-crafted premium vintage wines for over 25 years, and all made from grapes grown on his property in the Temecula Valley.  Their wine-making philosophy is simple: Baily makes wines that they personally like to drink. Their grapes grow on 28 acres of land across four different locations in Temecula Valley.

The Wines

Baily makes and sells all the Temecula Valley favorites including Cabernet, Merlot, Chardonnay, Riesling and plenty of classic red blends, such as Meritage. For the full list of Baily wines, visit the wine store.

 

The Vineyards

Mother’s Vineyard

The first acre of Mother’s Vineyard was planted by the Baily family on Mother’s Day in 1982. Expanded in 1983, it now comprises five and one-half acres, all planted to the Riesling variety. The grapes have the classic apricot flavor prized in Riesling.

Berenda Vineyard

Planted primarily to Bordeaux varieties, Cabernet Sauvignon (five and one-half acres), Cabernet Franc (two acres), Merlot (two acres), Sauvignon Blanc (two acres) and Semillon (one acre), this vineyard was planted in 1968 and purchased by the Baily family in 1994. In 2005, one and one-half acres of Malbec and two and one-half acres of Sangiovese were planted.

La Serena Vineyard

Comprised of one and one-half acres of Cabernet Sauvignon and one acre of Sauvignon Blanc, these grapevines are the ones you see at the visitor center. Grown on sandy/clay soil, they produce wines with exceptionally fruity varietal aromas.

Los Amantes Vineyard

Planted by Phil & Carol’s son and daughter-in-law, Chris and Kim, this vineyard has two acres of Chardonnay and two acres of Muscat Blanc. The soil is decomposed granite and well-drained, producing grapes with intense varietal aroma.

Carol’s Restaurant

Carol’s is a much-loved wine country restaurant located on the Baily winery property.  The perfect lunch spot in wine country, Carol’s offers both indoor and outdoor seating.  Recently, they have introduced a full dinner menu, available on Saturday evenings. If you’re a dog-lover, be sure to stop by every Sunday for Carol’s “Dog Day Sundays” to enjoy live music and special treats.

Wine Country Recipe: Pecan-Crusted Halibut with Papaya Salsa

Courtesy of Wilson Creek Winery, here’s a new recipe from The Creekside Grill’s Executive Chef Steve Stawinski. This light fish dish pairs well with Wilson Creek Winery’s 2012 Roussanne.

 

INGREDIENTS FOR HALIBUT

2 – 7 ounce halibut portions

Flour, seasoned with salt and pepper

2 large eggs

2 cups pecan halves, crumbled either by hand or in a food processor

Kosher salt and white or black pepper

1.5 oz canola oil

 

INGREDIENTS FOR SALSA

1 ripe Hawaiian papaya

1 medium, ripe Roma tomato

1 small red onion

1/2 jalapeno

1/4 cup chopped cilantro

1 tablespoon lime juice

 

HOW TO MAKE THE SALSA

Peel the papaya and cut in half lengthwise. Scrape out the seeds with a spoon. Dice the papaya into 1/2” cubes and put into a bowl. Cut the tomato in half lengthwise and squeeze out the seeds. Cut into 1/4” cubes and add to the bowl. Peel and dice the red onion and add to the bowl. Chop the jalapeno and add to the bowl along with the cilantro. Add the lime juice and stir to combine. Let sit for at least 20 minutes to marry the flavors together.

 

HOW TO MAKE THE HALIBUT

Whisk eggs in medium bowl to scramble. Season the halibut with salt and pepper. Dredge in flour, shake off extra. Place in the egg and coat thoroughly then coat with pecans. Heat the oil in a heavy bottomed skillet. Cook halibut in the pan over medium heat until golden. Turn the halibut over and continue to cook until second side is golden and fish is cooked through. Remove from the pan and rest on a clean kitchen or paper towel for 3 minutes.

Serve topped with the Papaya salsa. Enjoy!

Wine Country Recipe: Osso Bucco de Pollo

Osso Bucco De Pollo

Ingredients

  • 1 can (14.5 ounces) diced tomatoes
  • ½ cup chicken stock or broth
  • 1 medium carrot, roughly chopped
  • 1 stalk celery, roughly chopped
  • 1 small onion, finely chopped
  • 5 green and 5 black olives roughly chopped
  • 3 sprigs thyme
  • 2 teaspoons minced garlic, divided
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 5 chicken drumsticks small and frenched (3 ounces each)
  • ¼ teaspoon chili flakes
  • 1-1/2 teaspoons chopped flat-leaf parsley

 

Instructions

  1. In a 5- or 6-quart slow cooker, combine the tomatoes, chicken broth, carrot, celery, onion, thyme, olives, 1 teaspoon garlic, salt and pepper.
  2. Snuggle the chicken drums into the vegetable mixture.
  3. Cover and cook on low until the chicken and vegetables are tender, about 4 hours.
  4. With a slotted spoon, transfer the chicken drums to a serving dish. Discard the thyme sprigs.
  5. With a slotted spoon, transfer the vegetables to a bowl.
  6. In a small bowl, mix together the remaining teaspoon of garlic, chile flake and chopped parsley.
  7. Stir half the parsley mixture into the vegetables.
  8. Top the chicken with the vegetables and remaining parsley mixture and serve.

The Story

The Wines

Wine Country Recipe: New York Steaks with Gorgonzola-Walnut “Butter”

New York Steaks with Gorgonzola-Walnut “Butter”

…Paired with Cougar Meritage Red Wine

Serves 4

 

 

 

 

 

 

 

Ingredients:

4 New York steaks
½ cup olive oil
4 cloves garlic, thinly sliced
2 teaspoons balsamic vinegar
1 tablespoon freshly chopped rosemary
¼ teaspoon kosher salt
Freshly ground black pepper

For the “butter”
8 ounces Gorgonzola cheese, cut into small chunks
1 teaspoon white-wine or regular Worcestershire
2 teaspoons green peppercorns
¼ cup lightly toasted walnut halves
1 ½ tablespoons minced chives
6 drops Tabasco

How to make:

Place steaks in a glass dish. In a small bowl, whisk together olive oil, garlic, vinegar, rosemary, salt, and pepper. Marinate in refrigerator covered for 2 to 3 hours. Remove steaks from marinade when ready to grill.

To make “butter”, combine all ingredients in a food processor or blender and process for about a minute until mixed thoroughly. Can be refrigerated, but plan to serve at room temperature.

Prepare a hot fire and grill steaks for 5 to 6 minutes per side or until cooked to desired doneness. Shortly after turning, slather a mound of Gorgonzola butter on steaks and allow it to melt slightly while the steaks finish cooking.

Serve with couscous and additional Gorgonzola butter.

The Story

Lorimar Vineyard & Winery is a dream come true for brothers-in-law Lawrie Lipton and Mark Manfield.  Their collective experiences in hospitality and music inspired a unique winery concept.  “We showcase our wines with a supporting cast of musical, culinary and visual arts, accompanied by a passionate staff for the complete winery experience that engages all of the senses!”  Well, that says it all.

Lorimar is proud to announce the newly-opened Tuscan-style winery in the middle of Temecula Valley wine country on north Anza Road.  Featuring live music and a revolving art gallery, the new tasting room expands upon the arts-related features of the Old Town tasting room.

From the adjoining orange groves and 22 acre estate vineyard to a spectacular view of the Santa Rosa and Palomar Mountains, the setting is perfect for creating inspiring wine country memories with wine tastings, tours, private events and weddings.

Both Lorimar tasting rooms provide a friendly and uniqu­­e environment to enjoy their premium wines. “There’s always something exciting going on…wine tasting events, music, wine specials and wine classes,” says Mark Manfield.  “We’ve created a warm and inspiring place for people to stop in, relax and enjoy great wines.” The knowledgeable and friendly staff is always willing to answer questions about wine, lead guests through a structured tasting or just pour guests a great glass of wine of their choice…they’ll even offer you a recommendation or two regarding some great places to eat, stay, or taste in Temecula Valley.

There is a lot that goes on behind the scenes of wine making.  Take a closer look at the environmentally friendly and sustainable practices of the wineries in Temecula Valley Wine Country !

Stuart Cellars Winery

Planting:
Stuart Cellars Winery practices natural and organic planting process by using a natural soil amendment, pumice instead of chemicals. This results in better plant growth and health for the grapes. To keep away unwanted pests from the delicious grapes, organic insecticides are used. A centralized water irrigation system that goes directly to the base of the vines is used. This eliminates transpo-evaporation of the water by 33%!

Buildings:
One of the onsite buildings is completely solar powered! Stuart Cellars winery also produces all of their own power via a natural gas generator, which is the cleanest burning fuel in the United States!

 

Ponte Family Estate Winery

Reduce, Reuse, Recycle:
Ponte Family Estate Winery has been one of the sustainable winery leaders in the Southern California Wine Country. Since the winery was built, Ponte Family Estate Winery has recycled glass, cardboard cases, office paper and more. Ponte has also made efforts to reduce waste and their use of water and electricity.

Education:

A huge part of Ponte Family Estate Winery’s efforts is geared towards influencing guests, members and associates to reduce their individual footprint so that together, people can discover new ways to have a positive effect on our world today as well as for future generations.

Green Restaurant:

This award winning restaurant creates salads from local Farmer’s Markets.  Poultry and meats come from sustainable farms such as Snake River and Shelton Farms and all seafood selections are on the Seafood Watch from the Monterey Bay Aquarium, ensuring that it is safe and sustainable.  Kitchen waste is also composted and added to vineyard soil.

 

Wilson Creek Winery & Vineyard

Energy and Fuel:
Wilson Creek Winery & Vineyard is  working with a company on recycling their kitchen oil by converting it all into bio-diesel fuel!

*Keep an eye out for their documentary highlighting the process and how this kitchen grease is recycled into fuel for school buses.

Water Usage:
A new water treatment system that will collect their grey water (used water) and put it through a clarification process that will be then used for landscape (grass) irrigation is currently being installed.

Composting:
Compost/green waste is applied from time to time to increase the amount of organic material in their soils (mostly decomposed granite).This adds to the organic material on the top layers of the soil which in turn helps to increase the nutrients available in the vines.

Eating Locally:
Wilson Creek Winery & Vineyards Creekside Restaurant utilizes organic local produce offering vegetarian and vegan friendly options. Eating locally reduces waste since fuel is not wasting in efforts to transport the food.
