Blending Reds – Create, bottle and label your very own blend / In our Blending Class, you get to be the Winemaker! Wine Tasting for Dummies 101 / Our beginners class for Wine Tasters. This is a good class to take if this is your first visit to a winery and want to know the basics of wine tasting. You will also get to sample eight of our infused Avocado Oils and Balsamic Vinegars that are only available at Oak Mt. Winery.

Rhone Wine Class 201 / Our second, more advanced class after taking Wine Tasting 101 is our Rhone Wine Tasting Class 201. Learn how these grapes are grown here in the valley and how wine is made, while tasting varietals from different areas in the Rhone region of France. Grape Stomping Festival at Ponte

Celebration is in the air, and this one fun-for-the-entire family “blessing” you won’t want to miss. There’s a barbecue, face painting, tractor rides through the vineyards, live musical entertainment by Latin Jazz violinist Diego Mondragon, and his band, Savio Jazz, and of course, grape stomping contests. Wine Country Recipe: Pecan-Crusted Halibut with Papaya Salsa

Courtesy of Wilson Creek Winery, here’s a new recipe from The Creekside Grill’s Executive Chef Steve Stawinski. This light fish dish pairs well with Wilson Creek Winery’s 2012 Roussanne.

 

INGREDIENTS FOR HALIBUT

2 – 7 ounce halibut portions

Flour, seasoned with salt and pepper

2 large eggs

2 cups pecan halves, crumbled either by hand or in a food processor

Kosher salt and white or black pepper

1.5 oz canola oil

 

INGREDIENTS FOR SALSA

1 ripe Hawaiian papaya

1 medium, ripe Roma tomato

1 small red onion

1/2 jalapeno

1/4 cup chopped cilantro

1 tablespoon lime juice

 

HOW TO MAKE THE SALSA

Peel the papaya and cut in half lengthwise. Scrape out the seeds with a spoon. Dice the papaya into 1/2” cubes and put into a bowl. Cut the tomato in half lengthwise and squeeze out the seeds. Cut into 1/4” cubes and add to the bowl. Peel and dice the red onion and add to the bowl. Chop the jalapeno and add to the bowl along with the cilantro. Add the lime juice and stir to combine. Let sit for at least 20 minutes to marry the flavors together.

 

HOW TO MAKE THE HALIBUT

Whisk eggs in medium bowl to scramble. Season the halibut with salt and pepper. Dredge in flour, shake off extra. Place in the egg and coat thoroughly then coat with pecans. Heat the oil in a heavy bottomed skillet. Cook halibut in the pan over medium heat until golden. Turn the halibut over and continue to cook until second side is golden and fish is cooked through. Remove from the pan and rest on a clean kitchen or paper towel for 3 minutes.

Serve topped with the Papaya salsa. Enjoy!

For those who are not familiar with the term “vertical tasting”, it means tasting multiple vintages of the same wine from the same producer. The next tasting session will focus on eight (8) vintages of the Falkner Meritage blend.

Wine Appreciation Class Saturday, July 13 / 10:30a-2:30p.  This very educational and fun class is all encompassing and conducted by our Assistant Winemaker and in-house sommelier George Myers.  This class is great for both wine novices and experts in a single, 3+ hour class.  The class includes lunch and costs $65 per person, plus tax; Connoisseur Club Members, $60 per person, plus tax and VIP Club Members $20 per person, plus tax.  Class sizes are limited, so register early!  Call the winery at 951-676-8231 xt. 109 for reservations.

The Story

When the Wilson family acquired a 20-acre Temecula vineyard in 1996, their intentions were simply to build a family business producing great Temecula wines. 17 years later, Wilson Creek Winery is among the top-visited Temecula Valley wineries and the entire Wilson family can still be found on property every day welcoming loyal visitors and newcomers alike.  Winery guests feel the warm energy and personal touch of Wilson Creek the moment they step into the expansive tasting room or sit down for a great wine country meal at The Creekside Grille restaurant. The Wines

He has over 25 years of history in making award-winning wines, including a 16-year stretch at Mount Palomar Winery in Temecula; in addition, he’s worked with La Vina Winery in New Mexico and honed his expertise alongside famous Napa Valley winemaker, Jed Steel from Kendall Jackson Winery. Southern California wine enthusiasts are encouraged to stop by and meet Etienne—he always loves to chat about Wilson Creek wines.

Temecula Winemaker Roundtable: Fun Facts About… Red Wine Blends

Red wine blends are increasingly popular in the US, though they’ve long been the standard for regions as famous as Bordeaux, the Southern Rhone and Tuscany. Why? Because winemakers appreciate the flexibility and control blending allows; they are able fine tune the final wine to bring out the best of each variety and use them to balance each other. Like a meal made with one ingredient or a song that features only one instrument, single variety wines are sometimes less interesting and harmonious than blends.

Red wine blends may be labeled a variety of ways. Some popular blends you may see in Temecula include “Meritage” or “Super Tuscan” wines, but wineries frequently give their blends proprietary names, such as Monte de Oro’s Synergy 65, Callaway’s Calliope Red or Wilson Creek’s Double Dog Red.  This is a fun way of making the wine more identifiable, but it also signifies that the winery has truly created a wine that is theirs and theirs alone, since no two blends are exactly alike!

  1. Bordeaux blends: Red Bordeaux blends are generally made from a combination primarily dominated by Cabernet Sauvignon, Cabernet Franc, Merlot.  They also often include Petit Verdot, Malbec and Carménère.
  2. A red Meritage is a Bordeaux-style wine made in California that is a combination of at least two of six varietals:  Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Petit Verdot or Carmenère.
  3. A Super Tuscan originally served as reference to an Italian viticulture region. While some Super Tuscans are single varietal, most are blends primarily containing Sangiovese or Merlot, some are blends of Cabernet Sauvignon and Syrah, and some even more unusual blends which might include Petit Verdot, Cabernet Sauvignon, Syrah and Merlot.
  4. GSM is a classic combination of three grape varieties (Grenache, Syrah and Mourvedre) from the southern Rhone Valley.  It is also referred to as a Southern Rhone blend.
  5. Rhone blends from France’s Rhone Valley can contain up to 22 varieties.  As the US has only 12 of those varietals planted, New World wines are most often a combination Syrah and Viognier blended with Mourvèdre, Grenache, Roussanne and Marsanne, and perhaps Counoise, Cinsaut, Grenache Blanc and Petite Sirah.

Many wine-lovers have yet to discover how delicious a late harvest wine can taste – especially when paired with cheese and honey, chocolate or a fruit-based dessert.

The perfect sweet dessert wine for Valentine’s day, late harvest wine is simple to understand and easy to find here in Temecula Valley!

 

Here are five fun facts about late harvest wine!

  1. “Late harvest” refers to wines made from grapes left on the vine longer than usual and picked later than normal. Late harvest grapes are often more similar to raisins, but have been naturally dehydrated while still on the vine.
  2. Late harvest wines are made around the world with almost every grape imaginable. Grapes like zinfandel and riesling are ideally suited to produce late harvest wine and are among the most popular.
  3. Grapes used for late harvest wines go through their full growth cycle and then some – becoming super sweet and losing acidity as they ripen.
  4. “Noble rot” is the term for the edible mold that causes grapes to lose nearly all of their water content. This natural process begins to take place in late September and can last until late October.
  5. Late harvest grapes are often hand-picked. Sometimes, the usable grapes from one vine may only produce enough juice for a single glass.
