Wine Country Recipe: Molten Chocolate Cake with Dessert Wine Pairing

Valentine’s Day Molten Chocolate Cake

Recipe provided by Temecula Valley’s South Coast Winery Resort & Spa, The Vineyard Rose

Ingredients:

10 oz.  dark chocolate

1 stick butter

½ cup egg yolks (4)

1 cup egg whites (8)

4 oz. (1/2 cup) powdered sugar

Cordial

  • Dark chocolate 4 oz.
  • Cream 4 oz.
  • Maraschino cherries 1/4 c
  • Maraschino cherry juice 2 tb

 
Ice cream (optional)

 

Directions:

1. Melt chocolate and butter on a double boiler or in the microwave oven (cook and stir in 45 second intervals when using microwave).  Let cool.

2. When melted, stir in egg yolks very slowly while whisking.

3. In an electric mixer, whip egg whites till they begin to foam. Add sugar and whip egg whites until stiff peaks. (Be careful not to get fat of any kind mixed into the whites or they will not rise.)

4. When egg whites have doubled and formed stiffed picks, gently fold whites into the chocolate mix.

5. Grease a soufflé dish, fill the dish 3/4 full with mixture. Place the cordial sauce into the center of the mix. Bake at 400 for about 12 mins. The edges should be cooked and cakey, while the center nice and liquidy. Let cool for 5 minutes and enjoy. Garnish with mint, whipped cream or raspberries. Delicious when accompanied by ice cream.

Wine Country Recipe: Simple & Healthy Chicken Chili from Ponte Winery

Simple & Healthy Chicken Chili

Serves 6-8

Kick off the New Year with this quick and healthy chicken chili recipe. The perfect weekday meal, this hearty low-fat stew is a snap to put together and tastes even better if made the day before. Cook low and slow for a simmered braised result; or stir everything together and serve – either way, it’ll satisfy. When it comes to chili, delicious toppings are almost as important as the dish itself! Grated cheddar cheese, greek yogurt (doubles as sour cream) and minced scallions are a great trio. Or get creative with black olives, avocado, sun-dried tomatoes and fresh basil. Don’t forget the best part: the Temecula wine pairing from our good friends at Ponte Winery.

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients

  • 3-5 chicken breasts
  • 1 package chili seasoning
  • 1 white onion, diced
  • 2 garlic cloves, diced
  • 3-5 cans stewed tomatoes (can be different styles), drained
  • 4-5 cans of beans (kidney, black-mix it up!)
  • 1 small can tomato paste
  • 1 can of corn (optional)
  • 2 celery sticks (optional)
  • salt and pepper to taste

 

Instructions

In a large crock pot, combine stewed tomatoes, onion, garlic and chili seasoning. Add beans, tomato paste and chicken breasts (if chicken is frozen, thaw first). Cook on low for 6 hours or on high for 2-3 hours. Once done, shred chicken by mashing with a potato masher or use two forks to shred meat.  Set out various bowls of shredded cheese, sour cream or greek yogurt and scallions to garnish on top.

This makes quite a lot of chili but you can freeze any leftovers and have dinner made for a few nights. This chili recipe pairs well with Ponte Winery’s 2010 Malbec, which is a medium to full bodied red wine with aromas of blackberry, plum, and black pepper. But remember, you can pair this recipe with whatever Ponte wine is your personal favorite!

Temecula’s World of Wine Early Bird Tickets: $10 Off Thru February 1

World of Wines Barrel Tasting Weekend is Temecula Valley’s first regional tasting event of 2014, taking place March 1 & 2.

The “World of Wine” theme demonstrates the fact that the Temecula-South Coast AVA successfully grows varietals from all over the world. The WoW event is passport style, where hundreds of ticket-holders armed with a glass and a map can enjoy a self-guided tour through wine country. Over the course of the weekend, Temecula Valley’s 35 wineries offer special tastes of newly released, unreleased and barrel samplings of great Temecula wines, along with tasty tidbits and live music.

To promote and celebrate sustainability, participating wineries will have fun competing in the Best Winery Cork Art Contest, where the winning winery will receive a $500 donation to their favorite Southern California charity and the winning guest voter will be awarded four tickets to the region’s next big passport event.

Temecula Winery Spotlight: Get to Know… Callaway Vineyard & Winery

The Story

Founded by entrepreneur and savvy businessman Ely Reeves Callaway Jr., Callaway Vineyard & Winery has been a Temecula Valley wine country institution for 40 years.  After extensive research in the late 1960s, Ely decided to plant his roots in Southern California’s South Coast AVA to take advantage of the “Rainbow Gap,” the gap between the mountains that allows Pacific Ocean air into Temecula Valley, creating a vine-friendly climate consisting of cool nights and warm days.

The Callaway vineyards were planted in 1969 and by the early 1970s, they were one of a handful of Temecula wineries producing and selling wine. Many say that Ely Callaway helped put Temecula on the map as a serious wine producing region. Now privately owned, the winery property was purchased by the Lin family of San Diego in late 2005. Callaway Vineyard & Winery wines are only available at the winery and are not available in any retail stores.

 

The Wines


Still one of the region’s largest wineries, Callaway proudly makes wine only from Temecula Valley fruit. The winery currently grows seven different grapes across 220 acres. The estate vineyards are planted with Syrah, Zinfandel, Viognier, Sangiovese, Dolcetto and Cabernet Sauvignon grapes; additional acreage is planted with Cabernet Sauvignon and Chardonnay grapes.

Callaway’s Special Selection wines are high quality, limited productions that best exemplify the Callaway legacy. These wines are meant to be accessible, food-friendly and fun!

The brand’s “Winemaker’s Reserve” wines are aged longer to develop more complexity in the bottle. Chosen barrel by barrel for richness and depth, these wines are typically bigger and bolder to satisfy the seasoned wine lover.

The Tasting Room

Renovated in 2012, the stunning Callaway tasting room is enclosed by glass windows and surrounded by rolling-hill vineyards. The Callaway tasting experience operates on a grand scale, offering daily tastings, automated wine tasting stations, patio wine flights and winery production tours daily.
