Wine Country Recipe: California-Style Clam Bake

California-Style Clam Bake

Serves 4 as a main course, serves 8 as an appetizer

No matter where you are in the world, this garlic-infused California-style clambake recipe will bring the spirit of The Golden State to you.  Celebrate California Wine Month this September with this light and classic seafood dish, which can be served as an appetizer or a main dish.

Pair with California Sauvignon Blanc or Rosé.  *See below for Temecula wine suggestions!

Ingredients:

3 tablespoons (45ml) olive oil
4 shallots, roughly chopped
4 cloves garlic, peeled and roughly chopped
1 cup (240ml) California Sauvignon Blanc or other crisp white wine
1 cup (240ml) chicken stock
2 pounds (900g) mussels
2 pounds (900g) clams
1 tablespoons (15ml) parsley, finely chopped

Directions:

– In a large stockpot, over medium-high heat, add the olive oil, shallots and garlic.

– Sauté for 1 minute or until the vegetables are slightly browned.

– Add the wine and chicken stock.

– Bring the liquid to a boil and cook for 3 minutes.

– Add the mussels and clams and steam for 7 minutes. Halfway through the cooking time, shake the pot several times.

-Remove from heat and pour mussel and clams into a large serving dish.

– Garnish with parsley.

– Serve immediately, accompanied by a fresh, rustic-style bread.

Every Christmas Story Ever Told (and then some) – A Holiday Play: Written by Michael Carleton, John Alvarez and Jim Fitzgerald, three actors decide that rather than perform “A Christmas Carol” once again, they’ll retell Every OTHER Christmas Story Ever Told where they take holiday cheer to the extreme with a fast and furious look at the holiday classics and traditions we all remember. From Tiny Tim, Frosty and Rudolph to the Grinch and It’s A Wonderful Life, no holiday icon is spared in this whirlwind tour de farce of hilarious holiday merriment. Doors open at 6:00. Austen Tea, Tapas, & Wine: Jane Austen comes to Callaway Winery! In celebration of Jane Austen’s birthday, Christmas, the 200th Anniversary of Pride & Prejudice and the kick off of the opening of The Classical Theater Series Season 2012, Inland Valley Conservatory is pleased to announce the “Regency Period Tea,” We begin at 11:00am with an exhibition by Mission Hills Croquet Club. You can learn to play if you like and watch their top level player demonstrate his amazing tricks. This is not your backyard game folks! Our delightful hosts, Callaway Winery are serving up a Regency inspired menu, paired with their award winning wines. Special Guest Speaker, Doctor Laura Brodian Freas, founder of the Regency Society in San Francisco Bay Area will provide a lecture and rousing session of Regency Ballroom Dance in the beautiful Barrel Room. Dancers of all levels are welcome. There will also be a reproduction of Jane Austen’s Regency clothing as illustrated in the Friendship Book/Album of James Stanier Clarke on display. Shhhh! Unconfirmed rumors suggest that Jane Austen herself may be among the many guests in attendance! There’s no need to panic- we’ve got the perfect wine pairings to go with each dish on your Thanksgiving table so you’ll be way ahead of the curve. Just follow this simple guide and your friends and family will be thanking YOU for making their holiday meal extra special no matter what your budget.

Light appetizers:

Oak Mountain’s port has a nutty honeyed flavor to perfectly compliment the nutmeg and allspice flavors of pumpkin pie.

Winery Spotlight: Get To Know….Keyways Vineyards & Winery

Keyways Winery was one of the original wineries that established Temecula Valley Wine Country, and has the special distinction of being the only female-owned and managed winery in the region.

The story:

Keyways Winery was established in 1989 by Mr. Carl Key and was one of the very first to prove the viability of growing grapes in Temecula Valley. Current owner and manager Ms. Terri Pebley Delhamer has taken this historic winery and renovated the entire estate, both inside and out, to reflect the warmth and charm of an early California mission winery and vineyard. The tasting room features a black onyx bar, cork floors, a fireplace and- in an effort to appeal to women- beautifully appointed restrooms, filled with decorator touches. The outdoor area includes many spaces perfect for events such as the Vineyard Pavilion, Rose Terrace and Garden Gazebo.

The wine:

When Terri took over the vineyard, she replaced the original zinfandel grapes with Viogner, Roussanne, Tempranillo and Grenache.  Keyways’ winemaker David Raffaele lived in Italy for nearly six years and became fascinated with Italy’s enduring and prolific wine legacy. Highlights of Keyways’ wines include the 2008 Petit Verdot and their Meritage, dubbed “Territage,” for Keyways’ owner, Terri. Keyways also produces several dessert wines including a 2010 Late Harvest Roussanne and a 2010 Muscat Canelli.

 

Tastings:


Keyways is open Monday-Thursday, 11:00am-5:30pm and Friday-Sunday, 11:00am-6:00pm. The winery hosts multiple events, including Wine Down Fridays which are held on the 2nd and 4th Friday of every month and Sangria Serenade every Sunday from 1:30-5:30pm. Falkner Winery- Pinnacle Restaurant Valentine’s Wine Dinners
February 12th-14th

$79/person plus tax and gratuity; $69/person for Wine Club Members

The Pinnacle Restaurant at Falkner Winery will host romantic evenings with Valentine’s Wine Dinners in their award winning restaurant in Temecula. The dinners will be wonderful four course meals with individual wine pairings of the Falkner’s best wines in this panoramic, hill-top location. All dinner seatings will offer the same great food, sparkling wines, entertainment, and first class service. All food will be prepared under the direction of Executive Chef Gianni Ciciliot who was recently voted “Best Chef” by readers of Inland Empire magazine for the second year in a row. Seatings for these wonderful and memorable events will be at 7pm on Sunday the 13th and Monday the 14th and 5:30pm and 8:30pm on Saturday the 12th. The dinners on Saturday at 8:30pm and 7pm on Sunday and Monday will be preceded by a 30 minute Champagne Reception for those that arrive early.

Falkner Winery- Pinnacle Restaurant Valentine’s Wine Lunch Special
February 11th-14th

Come enjoy the Valentine’s Lunch Special in the Pinnacle Restaurant.  For $55 plus tax and gratuity for two people, diners will be able to have either one shared appetizer or salad for two; a choice of individual entrees such as Sweet Soy Glazed Seared Ahi served over Ginger Sautéed Spinach and Baby Carrots or Chicken Penne Pasta served with Artichoke Hearts, Fresh Tomatoes, Garlic, Shallots, Sun-Dried Tomatoes, and a White Grilled Chicken Sauce; and dessert of a shared Cheesecake or Molten Chocolate Cake.  Also included will be a non-alcoholic beverage per person.  Selected wines will be offered as an option with the Special at $5/glass.  This special will be available in addition to the normal menu so make reservations soon.  Diners will enjoy the wonderful and romantic Valentine hilltop ambiance of the Pinnacle.  Call the winery at 951-676-8231 ext 1 for reservations or make them online under the Restaurant Reservation tab.

Heather splits her time between Temecula, where she does commissioned portraits of children, families, women & weddings, and Los Angeles, where she  rubs shoulders with celebrities and captures the latest fashions on film and is the photographer at a production company, Rock & Rodeo. Now that the holiday season has arrived, serve your guests the best bottles from Temecula Wine Country.  This season, Inland Empire residents can support their So Cal community by shopping for their holiday meals locally and serving wine from the vineyards in their own backyard!

WINE GUIDE

Sparkling for cocktail hour:

  • Danza Del SolBlanc de Blanc Chardonnay, $28.95 – A deliciously dry brut, made in the Mèthode Champenoise method.  Hand your guests a glass as they walk in the door and they’ll look forward to a festive evening!
  • Thornton WineryNV Cuvee Rouge, $26 – A uniquely creative Cuvee that brings Syrah and Grenache together, with each variety partially fermented on the skins to develop color, then quickly pressed before the wines became too tannic or over-extracted. The result is a sparkling with a beautiful ruby color and a bouquet bursting with aromas of strawberry, plum and raspberry.
  • Wilson Creek WineryAlmond Champagne, $16.95 – This always-popular sparkler is lovely on it’s own and mixes well with that gourmet cheese and fruit plate.

Light starts for soups & salads:

  • Palumbo Family Vineyards & Winery2009 Viogner “Buon Vicino”, $18 is a unique white wine choice that will get your guests talking.  Bright honey and    floral nose with a huge, soft mouth feel and a truly crisp, dry finish with hints of mineral and stone.
  • Miramonte Winery2005 Sauvignon Blanc, Temecula Valley, Huis Vineyard, $24.95 boasts wild flower and cut grass aromas, fresh lime, orange, and red grapefruit flavors. Crisp, lean, and well-structured, everyone appreciates the perfect Sav Blanc to accompany their fall salad.
  • Stuart Cellars Winery2006 Malbec, $35 – This tasty drinkable red will prepare the palate for the heartier main course.  The nose has distinct fruity aromas of blueberry, lingonberry, strawberry, and red roses.  Heralded as the national grape of Argentina, Stuart is one of few Temecula wineries that grow this trendy varietal.

Bold main courses:

  • Hart Winery2006 Cabernet Sauvignon, Volcanic Ridge Vineyard, $36 – This full-bodied, intensely flavored wine was produced from a unique vineyard in the Temecula AVA, sited on a 2400-foot elevation ridge nearly within view of the Pacific Ocean; swept by cooling ocean breezes, with red volcanic soils from which thousands of volcanic rocks were removed before planting. Structured for lengthy aging and backed with European oak, this is truly a benchmark Cabernet.  Very limited: only 123 cases were bottled!  Silver Medal, Pacific Rim International Wine Competition.
  • Mount Palomar WineryCastelletto 2006 Sangiovese, $24 – Aged in a mixture of French, American and Hungarian oak barrels for 28 months.  Full-bodied, yet doesn’t get in the way of your rich entree.
  • Ponte Family Estate2006 Holiday Reserve Zinfandel Magnum, $39.95 -This scrumptious Zin is full of blackberry and currant flavors, perfect for enjoying with holiday fare such as prime rib and baked ham.  Plus, the Magnum size is always impressive for entertaining!

Dessert-worthy picks:

  • Callaway Vineyard & Winery2009 Special Selection Muscat Canelli, $18, Round out your holiday meal with a luscious, tropical fruit salad.  Pineapple, melon, jasmine, and cherry blossom lead to the silken palate of mango, kumquat, blood orange and earthy allspice.
  • Keyways Vineyard & WinerySimply Roussanne 2009, $26 – Refresh the palate with this off-dry white made with 100% Roussanne grapes.  It retains the similar rich and delicate flavors characteristic of this French grape, but with a creamier texture and a mellow sweetness that compliments Grandma’s pumpkin pie just right.
  • Robert Renzoni VineyardsParadiso Port, $48 – a perfect pairing with chocolate anything!  Aged in small French oak barrels for thirty-six months, this Italian port offers a silky, rich finish. The elegant black bottle affixed with the Renzoni family crest makes a beautiful holiday gift for that special wine-lover.
