Wine Country Recipe: Deep Dish Apple Tarte Tatin

Recipe provided by Europa Village and The Inn at Europa Village Executive Chef Dean Thomas.

This seasonal dessert recipe is a fall classic in France, but is simple enough to put together on a weeknight – all you need are four ingredients!

Apple Tart Tatin

Ingredients:

3 each firm Granny Smith or Gala Apples

6 Tbsp sugar in the Raw

1/4 stick of butter (2 tbsp)

6 Tbsp pie dough or puff pastry dough

Vanilla bean ice cream (optional)

 

Method of Preparation:

Begin by peeling and coring the apples; cut the apples in half or quarters; place into either an individual large muffin pan or a 10-inch deep dish cake pan.  Top with the butter and sugar in the raw.  Cover with the dough and bake at 350 degrees for 45 minutes until apples and sugar have caramelized.  Remove from the oven and cover the dough with a large size pan, immediately turn upside down and allow the tart to fall.  Allow to cool to room temperature and serve with your favorite vanilla ice cream or crème Anglaise.

Taste dozens of popular wines from 12 different Temecula Valley wineries paired with tasty bites from Westfield UTC’s finest restaurants: Seasons 52, Eureka Gourmet Burger & Craft Beer, Tender Greens and Fixtures Living’s own, Sam the Cooking Guy. The wine tasting stations will be operating from 4-7pm and concluding with a live sunset concert in Palm Plaza at 7pm featuring Michelle Branch and the music of Brandon & Leah.

Five Fun Facts About… Moscato

Moscato, Muscatel, Muscat… what’s the difference between them? Just the names, actually.  Rather than just being one grape, Muscat includes a family of grapes in a range of colors (from white to brown, or to near black.)  For instance, Moscato is the Italian name and Muscatel the Spanish.

Here in the U.S., Moscato is making its mark and has become the hot wine of the moment. Some would say sweet versions of Moscato are ideal for the American sweet tooth; it’s also an easy wine for the new wine drinker to love.

1.  Muscat is the only fine wine grape that doubles as a table grape.

Winemaker’s Roundtable: Five Facts About Tempranillo

As we head toward cooler temperatures and heartier fare, we’re partial to bold reds to warm us up and stand up to big flavors. Tempranillo is a great choice if you’re in the mood for a more intense red wine with hints of berries and plums.

 

 

  1. Tempranillo is a thick-skinned, black grape also known as the “noble grape” in its native Spain. The grape was brought to America, possibly as seeds, with the Spanish Conquistadors in the 17th century.
  2. Tempranillo came to California bearing the name Valdepenas.
  3. The Tempranillo grape is the main ingredient in Spanish Rioja and is often used in other blends due to its low acidity.
  4. Beef, lamb and sheep’s milk cheese such as manchego are all ideal to pair with Tempranillo. Of course, traditonal Spanish tapas are always a great choice to serve this wine.
  5. Many of our wineries produce this beautiful, powerful red which is the perfect wine for rich, holiday dishes. If you’re a fan of Cabernet Sauvignon but have never tried Tempranillo, here are a few to get you started: Masia de Yabar, Danza del Sol, Europa Village, and Frangipani Winery.

The Wine

Europa Village prides itself on having a French, a Spanish, and an Italian line of wines.  C’est la Vie, Bolero, and Vienza have uniquely different styles and offer an array of varietals.  Favorites include C’est la Vie’s Cabernet Sauvignon and Chardonnay, Bolero’s Tempernillo, and Vienza’s Sangiovese and Pinot Grigio.  Click on the above link to learn more!
