Wine Country Recipe ~ Beef Rib Roast with Horseradish Ricotta Cream

DECEMBER_BEEF_RIB_ROAST_2_FINAL_p_c-California-Wine-InstituteThis succulent rib roast served with peppery herbed ricotta cheese sounds absolutely delicious and would be the perfect meal for a chilly Sunday night! You’ll want to pair with your favorite Temecula Valley Cabernet Sauvignon or Merlot.

Ingredients:

1 standing rib-eye roast with 4 rib bones (about 9 pounds) bones removed and tied to the body of the roast (ask the butcher to do this)
15 ounces whole milk ricotta cheese
½ cup extra-hot horseradish
3 tablespoons thinly sliced chives
1/3 cup fresh lemon juice
½ teaspoon freshly ground black pepper
¼ teaspoon salt

Directions:

1. Preheat the oven to 450°F.
2. Place the meat, bone-side down, in a 2- to 3-inch-deep roasting pan.
3. Place the pan in the oven and roast for 15 minutes. Reduce the oven temperature to 350°F and roast for 2 more hours, or until the internal temperature reaches 125°F at the center of the meat.
4. Remove the string and let the meat rest for 20 minutes before carving.
5. While the meat is resting, mix the ricotta with the horseradish, chives, lemon juice, black pepper, and salt.
6. To serve, slice the meat and serve each portion with a spoonful of ricotta.

 

Suggested Pairings: 

Callaway Vineyard & Winery ~ 2012 Wild Yeast Cabernet Sauvignon – Dried blueberries, dark cherry and small black currants with liberal lashings of baking spice.

Oak Mountain Winery ~ 2010 Oak Mountain Merlot – A soft nose, with flavors of raspberry, blackberry, and plum with abundant smoky oak.

Ponte Winery ~ 2009 Cabernet Sauvignon – Hints of black currant, plum, cherry and oak.

Wilson Creek Winery ~ 2011 Family Reserve Merlot – Firm yet subtle tannins play with the earthy fruit of plum and black currant, soft and supple and lingering finish.

Thanksgiving Wine Pairing Guide

This is the time of year we get the most questions about wine pairings.  While there is no “right” or “wrong” wine to pair with your feast, there are a few varietals that, if paired with your favorite dishes, will send your taste buds into sensory overload.  We’re reprising this “oldie but goodie” Thanksgiving wine guide and have updated it with some suggested pairings to try this year.

Light Appetizers + Mellow Whites

These mellow whites pair well with lighter dishes to kick off your Thanksgiving meal. The floral notes of a Viognier complement a fall salad of pears, blue cheese and walnuts; a selection of fruit and cheeses match nicely with a Chardonnay; and a light Pinot Grigio will pair well with your pumpkin soup.

Temecula Valley Winery Owners Tell All! Their “Family Favorites.”

Have you ever wondered which wine is a “family favorite” at your favorite Temecula Valley winery?  We have too…so, we decided to ask a few of our winery owners which of their wines is their favorite….and, why.  Of course, we knew that asking them this question would be much like asking parents of multiple children which is their favorite, but we thought we’d give it a whirl!

Nick Palumbo, owner of Palumbo Family Vineyards & Winery says that he and wife Cindy’s fave is the “Tre Fratelli” Meritage blend.  As Nick tells it, not only is this wine consistently very good, but it’s got sentimental value for the Palumbo Family as well.  It is one of the first blended wines they produced in 2002 when Palumbo Winery opened and takes its name “three brothers” from the 3 boys of the Palumbo Family. The current release 2012, is a blend of 40% Cabernet Sauvignon, 40% Merlot and 20% Cabernet Franc.

The Lin Family, owners of Callaway Vineyard & Winery, have a brand new favorite wine. They challenged their winemaker, Craig Larson, to pull out all the stops and “do whatever it took, with no cost restrictions” to create a Cabernet Sauvignon that reflects their dedication and passion to bring the best quality wine in all of Temecula Valley and California.  What came of this challenge is the OPR, the Owner’s Private Reserve Cabernet Sauvignon, which the Lins believe has captured the very essence of everything they envisioned.

Over at Oak Mountain Winery, owners Steve and Valerie Andrews’ favorite is their Tenacious.  This wine is a Syrah-heavy Rhone blend named after Valerie’s mother who passed away over 25 years ago.  Val says “my mother, Arlene was tenacious in everything she did, and she did plenty.  Her license plate on her car was Ten8shs.  Whether she was working in the family liquor store, volunteering at the hospital, battling cancer or just being a great mom and friend, she was tenacious.  My parents introduced the wine industry to Steve and I, and look what happened!  Sorry to say, the wine is so good we drank it all…but a new vintage is coming soon.”

Monte De Oro Winery’s Ken Zignorski is passionate about their Syrah.  For him, it’s all about how well it pairs with food. Ken says “I like pairing the Syrah with a nice ribeye steak or tri-tip on the grill.  It’s got a full-bodied, mellow and a nice, lasting finish for me.  And, I think that Syrah is one of those grapes that really demonstrates Temecula Valley’s capabilities as a wine region.”

Rick & Jennifer Buffington, owners of Cougar Vineyard & Winery, lists Aglianico as their family favorite.  A black grape grown in the southern regions of Italy, it originated in Greece and was brought to the south of Italy by Greek settlers. Although it’s not a popular wine amongst the Temecula wineries, it is one that the Buffington family is proud to offer since it isn’t widely available and is very unique.  They appreciate the wine’s complexity, high acidity, firm tannins, rich flavor and its ability to pair well with food.  Plus….it only gets better with age!

At Briar Rose Winery, owners Les & Dorian Linkogle didn’t hesitate when it came to their favorite wine.  Sacrament is a rare and historic Mission Wine.  The Mission Wine is made from the Mission Grape planted by Father Junipero Serra to use for the Sacrament of Communion as he established 9 California missions from 1769-1782.  These Mission Grapes, also known as the Heritage Grape of the State of California, were planted along the El Camino Real by the Founder of California Missions.

Well, it’s safe to say that our owners love their Syrah, Cabernet Sauvignon and red blends!  So, what is your favorite Temecula Valley wine….and why??

Wine Country Recipe: Citrus Marinated Grilled Flank Steak Tacos with Roasted Tomatillo and Avocado Sauce

steak-tacos-ck-1898520-xJust in time for Cinco de Mayo! Citrus marinated steak and rich, smoky tomatillo sauce turn these tacos into something special. Pair with your favorite Temecula Valley Cabernet Sauvignon or Zinfandel.

Ingredients:
1½ lbs flank steak

Marinade
½ cup extra virgin olive oil
½ orange grated rind and juice
1 lime grated rind and juice
½ bunch cilantro leaves, finely chopped
2 garlic cloves, minced
2 tablespoons ground cumin
2 tablespoons ancho chili powder (or other chili powder)
1 tablespoon soy sauce
1 teaspoon honey

Roasted tomatillo sauce:
12 tomatillos, husks removed and quartered
1 clove garlic, minced
2 tablespoons (30ml) extra virgin olive oil
1 avocado, pitted and diced
½ bunch cilantro leaves
2 green onions, thinly sliced
1 jalapeno, seeded and diced
1 lime grated rind and juice
salt and pepper to taste

10 white corn tortillas, grilled
lime wedges

Directions:
Preheat oven to 350 F.  Place the flank steak in a resealable plastic bag and set aside.In a small bowl combine the marinade ingredients and whisk together. Pour the marinade into the bag with the steak, seal and shake together until the steak is well coated. Place the steak onto a shallow dish and then place in the refrigerator for about one and up to 6 hours.

While the steak marinates make the tomatillo sauce. Pour the tomatillos onto a baking sheet and top with the minced garlic, a drizzle of olive oil, salt and pepper. Roast the tomatillos for 20 minutes or until soft. Pour the cooled tomatillos into a food processor with the remaining sauce ingredients and puree until smooth. Season with salt and pepper and set aside until ready to use.

Remove the flank steak from the marinade and pat dry. Season with salt and pepper. Grill the flank steak on each side for about 5 to 6 minutes. Transfer the steak to a cutting board and allow it to rest for about 5 minutes Slice the steak against the grain into thin strips.

To assemble the tacos place desired amount of steak onto a grilled tortilla and top with the tomatillo sauce. Serve warm with a wedge of lime.

Callaway Winery ~ 2012 Zinfandel – This classic Zin begins with full aromas of rich, ripe strawberry, black cherry, dusty white pepper and anise, leading to the palate brimming with dried cranberry and jammy red and black fruits.

Leoness Cellars ~ 2012 Zinfandel – Rich and full-bodied, this wine offers aromas and flavors of sweet boysenberry and blackberry framed by soft tannins and a long, silky finish.

Thornton Winery ~ 2009 Cabernet Sauvignon – Very classic berry and pepper aromas came forth while subtle herbaeceous notes meld with the warm toasty aromas from the oak.

Wilson Creek Winery ~ 2011 Family Reserve Cabernet Sauvignon – This Cabernet displays deep rich ruby color. Aromas of spice reminiscent of clove with hints of leather layered with a fruitiness of blueberry and raspberry play on the nose. This wine’s structured tannins are well incorporated into a long pronounced finish.

Bubbles 101 – We want to burst your bubble with our champagne class / Oak Mountain Winery’s Sparkling Wine Class will have you taste three of our handcrafted sparkling wines made and bottled here in Temecula.  You will be served 3 of our sparkling wines paired with artisanal cheeses.  Learn fun facts you always wanted to know about sparkling wines and champagne.

Blending Reds – Create, bottle and label your very own blend / In our Blending Class, you get to be the Winemaker!  You will be supplied with three of Oak Mountain’s red wines, Cabernet Sauvignon, Cabernet Franc and Merlot, tasting notes, a measuring flask and pipette, three wine glasses for sampling your creation and a “cheat sheet” provided by our own winemaker to help you with the process.  You will have the option to bottle your custom blend of wine for an additional $29.  We will then pop in a cork and add a personalized label and you’ll take home wonderful memories – as well as a one-of-a-kind bottle of wine.

Wine Tasting for Dummies 101 / Our beginners class for Wine Tasters.  This is a good class to take if this is your first visit to a winery and want to know the basics of wine tasting.  You will taste three wines paired with delicious gourmet cheeses and dark chocolate toffee.  You will also get to sample eight of our infused Avocado Oils and Balsamic Vinegars that are only available at Oak Mt. Winery.

Rhone Wine Class 201 / Our second, more advanced class after taking Wine Tasting 101 is our Rhone Wine Tasting Class 201.  Learn how these grapes are grown here in the valley and how wine is made, while tasting varietals from different areas in the Rhone region of France.  Just like the 101 class, you’ll get 3 wine tastings and 8 tastings of Avocado Oil and Balsamic Vinegars.

Bordeaux Wine Class 201 / You will learn how these grapes are grown and how they are harvested and processed, while tasting Oak Mountain wines from different areas in the Bordeaux region of France.  Just like the 101 class, you will get 3 wine tastings and 8 tastings of Avocado Oil and Balsamic Vinegars.  We recommend that you have taken our Wine Tasting 101 class prior to this course.
