The Story

Baily Winery is one of Temecula’s oldest wineries, founded in 1986. Owner and winemaker Phil Baily has produced hand-crafted premium vintage wines for over 25 years, and all made from grapes grown on his property in the Temecula Valley.  Their wine-making philosophy is simple: Baily makes wines that they personally like to drink. Their grapes grow on 28 acres of land across four different locations in Temecula Valley.

The Wines

Baily makes and sells all the Temecula Valley favorites including Cabernet, Merlot, Chardonnay, Riesling and plenty of classic red blends, such as Meritage. For the full list of Baily wines, visit the wine store.

 

The Vineyards

Mother’s Vineyard

The first acre of Mother’s Vineyard was planted by the Baily family on Mother’s Day in 1982. Expanded in 1983, it now comprises five and one-half acres, all planted to the Riesling variety. The grapes have the classic apricot flavor prized in Riesling.

Berenda Vineyard

Planted primarily to Bordeaux varieties, Cabernet Sauvignon (five and one-half acres), Cabernet Franc (two acres), Merlot (two acres), Sauvignon Blanc (two acres) and Semillon (one acre), this vineyard was planted in 1968 and purchased by the Baily family in 1994. In 2005, one and one-half acres of Malbec and two and one-half acres of Sangiovese were planted.

La Serena Vineyard

Comprised of one and one-half acres of Cabernet Sauvignon and one acre of Sauvignon Blanc, these grapevines are the ones you see at the visitor center. Grown on sandy/clay soil, they produce wines with exceptionally fruity varietal aromas.

Los Amantes Vineyard

Planted by Phil & Carol’s son and daughter-in-law, Chris and Kim, this vineyard has two acres of Chardonnay and two acres of Muscat Blanc. The soil is decomposed granite and well-drained, producing grapes with intense varietal aroma.

Private tasting experiences for up to 12 people are now available at the new exclusive Estate Club located at the production facility, hosted by owner and winemaker Phil Baily. This appointment-only experience features a library tasting with personal attention conducted in a beautifully appointed, intimate setting.  Included is a tour of the production facility at one of the few wineries in this Region where every bottle of wine is estate grown and bottled.

Price $40 per person. Payment is due in advance with a 48 hour cancellation policy. No shared tastings.

 

Carol’s Restaurant

Carol’s is a much-loved wine country restaurant located on the Baily winery property.  The perfect lunch spot in wine country, Carol’s offers both indoor and outdoor seating.  Recently, they have introduced a full dinner menu, available on Saturday evenings. If you’re a dog-lover, be sure to stop by every Sunday for Carol’s “Dog Day Sundays” to enjoy live music and special treats.

Five Fun Facts About… Merlot

Considered one of the most food-friendly and approachable wines on the planet, Merlot surged to popularity in the United States in the 1990s. Now wine-lovers can find great Merlot and delicious Merlot blends from all over the world – from South America to France to Italy to right here in Temecula Valley, California.

Here are five fun facts about Merlot!

  1. Did you know the word “merlot” translates to “young blackbird” in French? The name was thought to have been given either because of the grape’s beautiful blue-black color, or blackbird’s fondness for grapes.
  2. Merlot’s flavor profile fluctuates within the sweetness spectrum. Cooler climates bring out hints of berries, plum, and even tobacco. Merlot grown in hotter climates might mimic flavors found in fruitcake or chocolate.
  3. A bit about Merlot blends: When Merlot first arrived in California, it mostly sold as single varietal bottlings (100% Merlot) until winemakers began blending it with other red grapes in the French Bordeaux tradition. Now, California’s Meritage wines are a signature of the state and always include Merlot as one of the essential blending grapes.
  4. Merlot is so popular because of the grape’s ability to please all palates. Wines can range from very fruity simple wines to more serious, barrel-aged bottles.
  5. Merlot has a high sugar content and low acidity, which makes it a very food-friendly wine, able to be paired with a variety of dishes. For example, Cabernet-like Merlots pair well with grilled meats. Softer, fruitier Merlots go well with salmon, mushroom-based dishes and greens. Light-bodied Merlots pair well with shellfish like prawns or scallops, especially if wrapped in bacon or prosciutto.

The Story

Baily Vineyard & Winery was established in 1986 by Phil and Carol Baily with the goal of producing excellent wine from their own grapes to be sold primarily out of the winery. Specializing in Bordeaux varietals, Phil and Carol handle all aspects of the winery, from vineyard maintenance to customized blending to creating the delicious menu at their popular restaurant.

The Wines

The Bailys have been making wine in Temecula Valley for 26 years. They are proud to be an estate-bottled winery, which means that all the grapes are grown in the same vineyard and made by the same winemaker – Phil himself! Baily wines offer a depth and consistency that appeal to the advanced wine enthusiast. A trip to the tasting room gives visitors a chance to try all their favorite varietals – from Chardonnay and Riesling to Cabernet and Merlot; plus some fantastic blends! Winermaker’s Roundtable: Five Facts About…Beaujolais Nouveau, + Baily Winery To Release 2011 Cabernet Nouveau

November 17th marks the third Thursday in November, which is Beaujolais Nouveau Day all around the world. Here’s five facts you may or may have not known about this young wine:

  1. Beaujolais is a red wine made from Gamay grapes- the only grape permitted for this wine- in the Beaujolais region, south of Burgundy, in France.
  2. Beaujolais Nouveau is the new vintage, usually fermented for just six weeks before shipping.
  3. It is generally recommended that Beaujolais Nouveau be drunk no later than the following May after its release, although certain vintages that are considered to be excellent (2009, for example) can be saved much longer.
  4. It is mandated that all of the grapes in the Beaujolais region be picked by hand.
  5. This wine is always released on the third Thursday in November no matter how short the harvest.

Speaking of “nouveau,” Baily Vineyard & Winery celebrates 25 years of producing wine with the release of its 2011 Cabernet Nouveau on the weekend of November 18,19 and 20. The wine will be raced from the bottling line to the Baily Tasting Room at La Serena Way and Rancho California and then on to Front Street Bar & Grill in Old Town Temecula where it will first be introduced to the public.

The wine was made using the carbonic maceration process in which whole bunches of grapes gently placed in the fermenters without crushing. The result is a highly aromatic lighter style red that is meant to be consumed in the first few months after bottling. This method is commonly used in the Beaujolais area of France where the first wines of each year are traditionally raced to Paris each November and released to much fanfare and revelry.

Long-time Temecula Valley resident and winery-owner Phil Baily talks about his favorite wines, the history of Baily Winery, and how a good meal without wine is like “a day without sunshine.”
