Wine Country Recipe: Scallops and Risotto from South Coast Winery

Thursday, July 26th, 2012

Butter Poached Scallops with Aged Gouda Risotto

Courtesy of The Vineyard Rose Restaurant

Scallops:

Scallops – as many as you desire

¾ lb butter

1 cup Viognier wine

½ bun of parsley

salt & pepper to taste

To make:

  1. Season scallops with salt and pepper in a hot skillet, about 2 minutes each side
  2. Put a roasting pan on the stove on low heat.  Add butter, wine and parsley.
  3. Wait for the butter to melt, add the scallops.  The heat should be real low, and the liquid should not be boiling but just under a simmer.
  4. Let soak for about 10 minutes

Risotto:

1 cup Arborio rice

2 ½ cup chicken broth

2 shallots

1 cup shredded Aged Gouda

1 tab of butter

½ bun of parsley, chopped

 To make:

  1. Chop shallots and sauté in large skillet with butter; cook shallots till they are nice and dark
  2. Add rice, stir and cook for about 1 minute; add half of the broth and reduce heat.
  3. Stir occasional, making sure the rice does not stick.  When all the stock is just about absorbed, add a little more stock and stir.  Repeat and continue till all the stock is used.  Cook till all the broth is just about absorbed, the rice should appear to be creamy and should be nice and tender.
  4. Turn off heat and stir in parsley and cheese.  Season to taste.

Assembly:

  1. Spoon a little risotto on to a plate.
  2. Place a couple of scallops per plate, and spoon just a touch of the butter over the top of the scallops.  Enjoy!

Pair it with Carter Estates Viognier a delightful summer wine!

The Vineyard Rose Restaurant is open for breakfast, lunch, and dinner; located at South Coast Winery Resort & Spa.

Winery Spotlight: Get to Know… Lorimar Vineyard & Winery!

Tuesday, July 24th, 2012

The Story

Lorimar Vineyard & Winery is a dream come true for brothers-in-law Lawrie Lipton and Mark Manfield.  Their collective experiences in hospitality and music inspired a unique winery concept.  “We showcase our wines with a supporting cast of musical, culinary and visual arts, accompanied by a passionate staff for the complete winery experience that engages all of the senses!”  Well, that says it all.

Lorimar is proud to announce the newly-opened Tuscan-style winery in the middle of Temecula Valley wine country on north Anza Road.  Featuring live music and a revolving art gallery, the new tasting room expands upon the arts-related features of the Old Town tasting room.

From the adjoining orange groves and 22 acre estate vineyard to a spectacular view of the Santa Rosa and Palomar Mountains, the setting is perfect for creating inspiring wine country memories with wine tastings, tours, private events and weddings.

Both Lorimar tasting rooms provide a friendly and unique environment to enjoy their premium wines. “There’s always something exciting going on…wine tasting events, music, wine specials and wine classes,” says Mark Manfield.  “We’ve created a warm and inspiring place for people to stop in, relax and enjoy great wines.” The knowledgeable and friendly staff is always willing to answer questions about wine, lead guests through a structured tasting or just pour guests a great glass of wine of their choice…they’ll even offer you a recommendation or two regarding some great places to eat, stay, or taste in Temecula Valley.

Winemaker’s Roundtable: Five Facts About… Zinfandel

Tuesday, July 17th, 2012

Shrouded in mystery and rich in history, the bold Zinfandel grape is a notorious and versatile red wine.  Red berry fruit flavors (think raspberry) predominate in wines from cooler areas; whereas blackberry, anise and pepper notes are more common in wines made in warmer areas.

Zinfandel pairs exceptionally well with outdoor-grilled steaks or chops, barbequed meats, rich bolognese sauce, or dark chocolate desserts.  Often more than other wines, a great Zinfandel experience motivates folks to become wine-lovers.

Here are five zinteresting facts about America’s heritage grape!

1.  Zinfandel’s origins used to be unknown, but its DNA can now be traced back to the specific combination of a Croation grape (Crljenak) and an Italian grape (Primativo.)

2.  Zinfandel made its way to California via The Gold Rush in the 1850’s.  Throughout the 20th century, California has been recognized as having the most exceptional regions for growing this hardy grape.

3.  Starting around 1980, Zin achieved widespread popularity in America as a slightly sweet blush wine. In fact, this popularity so outstripped all other forms, that many fans think that there is actually a grape called “White Zinfandel” (there isn’t!)

4.  Zinfandel is considered a chameleon.  It can be made light and fruity, much like French Beaujolais, or lively, complex and age worthy, like Cabernet or claret. It can also be made into big, ripe, high alcohol style wines that resemble Port.

5.  When Zinfandel wine ages, it sometimes tastes “hot” (predominantly alcoholic) and is often at its best within 3-5 years of its vintage.

On your next visit to Temecula wine country, be sure to order a bottle of Zinfandel at the following wineries —
